Paula Deen's Famous Cheese Grits

If you're from the south you need to try Paula Deen's Famous Cheese Grits and even if you are not you need to anyway.

BAKED GARLIC CHEESE GRITS
(a Southern Favorite. These grits go well with seafood, too,)

6 cups of chicken broth (canned is fine)
1 tsp. salt
1/4 tsp. pepper
2 cups regular grits
3 Six ounce rolls Kraft cheese food with garlic, or any garlic Cheddar spread, cut up
1/2 cup milk
4 eggs, beaten
1/2 cup (1 stick) butter
1 cup grated sharp Cheddar cheese

Preheat oven to 350 degrees F. Grease a 4-quart casserole dish.

Bring the broth, salt, and pepper to a boil in a 2-quart saucepan. Stir in the grits and whisk until completely combined. Reduce the heat to low and simmer until the grits are thick (about 8 minutes).

Add the garlic cheese and milk and stir. Gradually stir in the eggs and butter, stirring until all are combined.

Pour the mixture into the prepared casserole dish. Sprinkle with the Cheddar cheese and bake for 45 minutes or until set.

Grafeful for What You Have Left

Hurricanes are so unpredictable, when you come through one in one piece and with electricity, water and the other finer things of life you can truly count your blessings...

Hurricane Ike Time

It landed on land at about 2:10 a.m. I must confess I was asleep. My daughter, Melody, called me at 5:22 a.m. and the clock was flashing 12:46 a.m.

Saturday Morning Following Hurricane Ike

It was rainy, wet, and trouble was on it's way. All we were hearing on the television was the worst was to come. And it did....
